Cowgirl Casserole

List of Ingredients
- 1 medium onion chopped
- 1 cup diced carrots
- 1 red bell pepper diced
- 1 cup fresh or frozen green beans cut into 1/2" pieces
- 1 cup frozen corn
- 1 (15 ounce) can vegitarian baked beans
- 1 teaspoon barbecue seasoning or barbecue sauce
- 1 tablespoon ketchup or tomato paste
- 3 ounces smokey cheddar or smokey edam cheese diced or shredded
Instructions
- Preheat oven to 375.
- In a nonstick skillet, saute onions, carrots and peppers until soft but not browned.
- Add the green beans and cook 5 minutes.
- Stir in the corn, baked beans, seasoning and ketchup.
- Cook 2 minutes until heated through.
- Pour into a baking dish and scatter the cheese on top.
- Cover and bake for 30 minutes, until the casserole is bubbling and the cheese is melted.
- 6 main dish servings at 4 points each.
