    List of Ingredients


    • 1 cup sliced onion
    • 2 teaspoons olive oil
    • 2 garlic cloves, minced
    • 1 sweet yellow pepper, cut into rings
    • 1 (14 1/2 ounce) can mexican-style stewed tomatoes, undrained
    • 4 (4 ounce) orange roughy fillets, or other lean white fish
    • dash of garlic powder
    • dash of ground red pepper


    Instructions


    1. Heat oil in a large nonstick skillet over medium heat.
    2. Add onion and garlic; saute 7 minutes or until tender.
    3. Add yellow pepper and tomatoes; cook over medium high heat 3 minutes.
    4. Add fish; sprinkle with garlic powder and red pepper.
    5. Cover, reduce heat and simmer 5 minutes.
    6. Turn fish, cover and simmer 5 minutes more or until fish flakes easily with a fork.
    7. Transfer fish to serving plates, reserving cooking sauce in skillet. Keep fish warm.
    8. Place skillet with cooking sauce over medium high heat and cook 3 minutes or until thickened.
    9. Spoon sauce over fish.
    10. 4 servings at 150 calories each.
