    • 1 (8 ounce) can crushed pineapple in juice, drained (reserve liquid)
    • 1/4 cup reserved liquid
    • 1/2 cup water
    • 1/2 teaspoon apple pie spice
    • 3 cups shredded carrots
    • 1/4 cup raisins
    • 2 tablespoons chopped pecans (1/2 ounce)


    Instructions


    1. In a large skillet, combine pineapple juice, water and apple pie spice.
    2. Add carrots. Mix well to combine.
    3. Cover and cook over medium heat, stirring occasionally until tender, about 8 to 10 minutes.
    4. Stir in raisins, pineapple and pecans.
    5. Reduce heat and continue cooking until mixture is heated through, stirring often, about 5 minutes.
    6. Yields 3 cups 4 - 3/4 cup servings at 130 calories each.
