- 1 (8 ounce) can crushed pineapple in juice, drained (reserve liquid)
- 1/4 cup reserved liquid
- 1/2 cup water
- 1/2 teaspoon apple pie spice
- 3 cups shredded carrots
- 1/4 cup raisins
- 2 tablespoons chopped pecans (1/2 ounce)
Instructions
- In a large skillet, combine pineapple juice, water and apple pie spice.
- Add carrots. Mix well to combine.
- Cover and cook over medium heat, stirring occasionally until tender, about 8 to 10 minutes.
- Stir in raisins, pineapple and pecans.
- Reduce heat and continue cooking until mixture is heated through, stirring often, about 5 minutes.
- Yields 3 cups 4 - 3/4 cup servings at 130 calories each.
