Great Halloween Cookies!
List of Ingredients
6 cups all-purpose flour
1 T baking powder
1/2 T cream of tartar
1/2 t salt
2 1/2 cups shortening
1 cup sugar
1 t sugar
1 t pumpkin pie spice
2 eggs
1/4 c freshly squeezed orange juice
1 T ground cinnamon
1/4 c sugar
Recipe
Preheat oven to 350 degrees. In large bowl, combine flour, baking powder, cream of tartar and salt; set aside. In bowl of stand mixer, beat shortening until light and fluffy. Add sugar and pumpkin-pie spice and mix until creamy. Add eggs, one at a time, and blend. Add flour mixture and orange juice; mix well. Turn dough out on lightly floured board, knead until smooth, then roll out to 1/4 inch thickness. Cut dough using Halloween-themed cookie cutters. Onto parchment-covered (or non-stick) baking sheet, place cookies. Mix cinnamon and sugar, then sprinkle over unbaked cookies. Bake cookies until bottoms are lightly browned, about 10 minutes. Frost when cool. Makes 5 to 6 dozen.
