    RECIPE INGREDIENTS
    Ingredients:
    • 2 zucchini or other squash, finely shredded
    • 2 carrots, finely shredded
    • 1 Red Pepper,chopped medium fine
    • 1 large onion, coarsely chopped
    o OPTIONAL: 1 pound ground meat, your choice of chicken, turkey, or beef
    • 3 gloves garlic, skinned, smashed, and minced
    • 2 small cans black beans, rinsed and drained
    • 2 small cans red kidney beans, rinsed and drained
    • 1 small can white kidney beans (cannellini), rinsed and drained
    • 1 2 pound can peeled Italian plum tomatoes
    • 1 small can tomato paste
    • Extra virgin olive oil
    • Vietnamese chili garlic paste
    • ½ tablespoon cocoa powder
    • Kosher salt (1 to 2 teaspoons, depending on taste)
    • Fresh ground black pepper, about 1 teaspoon
    • 3 to 4 tablespoons good grade chili powder (Dark type)

    DIRECTIONS 1. In a large heavy pot, put in 1 to 2 tablespoons extra virgin olive oil. Heat the pot over medium high heat.


    a. If using meat, put the meat into the pot and stir while browning. After the meat is brown, pour off most of the fat.


    2. Add the onion and sauté until translucent.


    3. Add the garlic and stir for about 1 minute.


    4. Add the carrot, red pepper, and zucchini. Cook for about 1 more minute.


    5. Clear all of the meat/vegetables to the side and put the chili powder and cocoa in the center of the pot and heat until the point of fragrance.


    6. Mix everything in the pot together. Put in the tomatoes and bring to the boil.


    7. Boil for about 3 or 4 minutes. Add the tomato paste, chili garlic paste, salt and pepper. Stir well.


    8. Add the beans and reduce heat to low. Keep the pot on the simmer for about 30 or 40 minutes
