List of Ingredients
- 1 - 1# can salmon
- 2 cups soft bread crumbs
- 1 tbsp chopped onion
- 1 tbsp butter melted
- 1/2 tsp salt
- 1/2 cup milk
- 1 slightly beaten egg
- Butter sauce:
- 3 tbsp butter
- salt & pepper
- 2 egg yolks, beaten
- 3 tbsp flour
- 1 1/2 c. milk
- 1 tsp lemon juice
Instructions
- TO MAKE LOAF: combine salmon, crumbs, chopped onion ,butter & salt. Combine milk & egg. Add to salmon mixure and mix throughly. Shape into a loaf. Place in a 7 & 1/2 X 3 & 3/4 X 2 & 1/4 loaf pan, or on a greased shollow baking pan. Bake at 350* for 35 - 40 min. Serve with Butter Sauce.
- BUTTER SAUCE: Melt butter in small saucepan, stir in flour, salt and petter until smooth., Add milk, eggs and lemon juice.

Suggestions: Salmon Loaf goes well served with creamed peas.
