    PINEAPPLE UPSIDE DOWN CAKE

    Preheat oven to 350F.


    List of Ingredients


    • 1 cup brown sugar
    • 1/3 cup butter
    • 1 20 oz. can of pineapple, sliced, crushed or chunk
    • 3 egg yolks, beaten slightly
    • 1 cup sugar
    • 1/2 cup pineapple juice
    • 1tsp. vanilla
    • 1 1/3 cups flour
    • 1 tsp. baking powder
    • 3 egg whites, stiffly beaten


    Instructions


    1. Melt butter in a cast iron skillet and add brown sugar. Stir over a slow fire until thoroughly melted. Arrange pineapple slices and allow to simmer slowly while preparing the following:
    2. Into the beaten egg yolks add white sugar, pineapple juice and vanilla.
    3. Sift the flour with the baking powder and stir into yolk mixture.
    4. Fold in the egg whites and pour over simmering pineapple syrup. Remove from stove.
    5. Bake in the same frying pan in the oven for 20 to 30 minutes.
    6. Turn out on a large plate.
