PINEAPPLE UPSIDE DOWN CAKE

Preheat oven to 350F.
List of Ingredients
- 1 cup brown sugar
- 1/3 cup butter
- 1 20 oz. can of pineapple, sliced, crushed or chunk
- 3 egg yolks, beaten slightly
- 1 cup sugar
- 1/2 cup pineapple juice
- 1tsp. vanilla
- 1 1/3 cups flour
- 1 tsp. baking powder
- 3 egg whites, stiffly beaten
Instructions
- Melt butter in a cast iron skillet and add brown sugar. Stir over a slow fire until thoroughly melted. Arrange pineapple slices and allow to simmer slowly while preparing the following:
- Into the beaten egg yolks add white sugar, pineapple juice and vanilla.
- Sift the flour with the baking powder and stir into yolk mixture.
- Fold in the egg whites and pour over simmering pineapple syrup. Remove from stove.
- Bake in the same frying pan in the oven for 20 to 30 minutes.
- Turn out on a large plate.
