    Shrimp Cocktail, from Las Casuels Terraza, Palm Springs

    List of Ingredients




    3 tomatoes, diced
    1 cucumber, peeled, seeded and diced
    1 medium size white onion, chopped
    1 small bunch cilantro, chopped
    1 can red chile sauce (12 ounces)
    1 bottle (7 ounces) ketchup
    Juice of 1 large lemon
    1&1/2 teaspoons prepared horseradish
    3/4 cup tomato juice
    2 pounds raw shrimp

    Recipe



    Combine tomatoes, cucumber, onion, and cilantro in bowl. In another bowl,
    blend chile sauce, ketchup, lemon juice, horseradish and tomato juice. Cook
    shrimp in pan of simmering water to cover just until shrimp turn pink. Drain.
    Reserve 1 cup of shrimp cooking broth. Peel and coarsely chop shrimp. Add
    reserved broth to tomato sauce mixture. Add shrimp and mix well. Chill. Serve
    in chilled cocktail glasses.
