36 Ritz crackers, finely crushed ( about 1-1/2 cups of crumbs)
3 Tbsp. of butter, melted
1/2 cup of roasted red peppers, chopped
4 eggs
3/4 cup of milk
1/2 cup of Grey Poupon Dijon Mustard
1/4 cup of chopped, fresh parsley
1 (8 ounce) package of shredded Mozzarella cheese, divided
1/4 cup of Di Giorno shredded Pecorini Romano Cheese
Recipe
Mix the cracker crumbs and butter; press into the bottom of a greased 9x13x2 inch pan. Bake at 350F for 8-10 minutes or until golden brown. Remove from the oven and let stand for 5 minutes.
Sprinkle 1 cup of the mozzarella cheese over the crust. Top with the red peppers and remaining mozzarella cheese.
Beat eggs, milk, mustard and parsley in a medium bowl with a wire whisk until blended. Pour evenly over the cheese in the pan. Sprinkle with the Pecorini Romano cheese.
Bake at 350F. for 30 to 35 minutes or until set. Let stand for 10 minutes. Cut into 2x1-1/2 inch squares. Serve warm.
