    Betty Carter's Quick Cornbread

    List of Ingredients




    1 tablespoon butter
    3/4 cup white or yellow cornmeal
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1 egg
    1 1/2 cups buttermilk



    Recipe



    Preheat oven to 400 degrees. Place the butter in a 4 cup baking dish and
    place in the preheated oven. Combine cornmeal, salt and baking soda. Beat
    egg until blended and stir in to buttermilk. Pour over dry ingredients and
    stir only until blended. Remove pan from oven and tilt to distribute
    butter evenly. Pour batter immediately in to hot pan. Bake 20 to 25 minutes
    or until firm and lightly browned.
