JELLY "DONUT" MUFFINS
List of Ingredients
2 tablespoons shortening
1/2 cup sugar
1 egg
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup milk
1/4 cup jelly
1 cup chopped nuts or pecans -- optional
1 tablespoon melted butter
Recipe
Cream shortening and sugar. Add egg and beat. Add remaining dry
ingredients alternately with milk. Spray texas-sized muffin pans,
fill 1/2 full. Place a heaping spoon of jelly on each, then top with
more batter. Brush with butter, then sprinkle nuts and more cinnamon
on top. Bake at 400*F for 20-25 minutes. Serves 6
