HAM, CHEESE AND MUSHROOM OMELETTE
List of Ingredients
1 tsp. butter
3 eggs, beaten
1 T. water
1/4 tsp. dry mustard
fresh ground pepper to taste
1/3 C. onion, thinly sliced
3 slices very thin shaved ham
1 slice Swiss or American cheese
Recipe
Melt butter in 8-inch Teflon frying pan. Saute onions and mushrooms
until soft. Lay ham over top. Keep warm. Beat eggs with water. Add
mustard and pepper. Pour mixture into pre-heated, buttered frying
pan. Lift edges as egg sets to let mixture run onto pan. When egg
mixture is set, flip and remove from heat. Place filling on half of
egg. Top with cheese slice. Fold over and place on warm plate. Serve
with salsa.
