    Queen Bee on Mimi's

    List of Ingredients





    1� cups salad oil
    1 cup honey or brown sugar
    2 cups flour
    2 tsp. each baking powder and soda
    2 tsp. cinnamon
    � tsp. allspice
    1 tsp. salt
    2 cups shredded carrot
    � cup nuts
    � cup coconut
    1 cup crushed pineapple - undrained

    Frosting:
    1 large package cream cheese (16 oz) (450 grams)
    3 cups icing sugar
    � cup butter (no substitutes)
    � tsp. vanilla

    Recipe



    Method for Cake: Mix in order given and bake at 350 for 60-70 mins. (I make mine in a large loaf pan but I think you could do it in a 8 inch springform pan just a well)

    Method for frosting: Cream the cheese until soft and fluffy , beat in the butter, blend in the vanilla then gradually mix in the icing sugar to the consistency you desire. If it's a bit stiff you can add a wee bit of cream or milk..
