List of Ingredients

Crust:
2 cups crushed chocolate cookies (very thin crisp store-bought cookies, without filling)
1/2 tsp cinnamon
1/2 C melted butter
Press into well-buttered 10" springform pan. Chill.
Batter:
32 oz cream cheese
1 c sugar
4 eggs
12 oz. melted semisweet or bittersweet
chocolate--but definitely NOT "baking chocolate" (I prefer to use the packaged
baking blocks rather than the bagged chocolate chips which have wax in them)
3 Tbl cocoa
1 1/2 tsp vanilla
3 cups sour cream
1/3 C melted butter
Optional: 3 Tbl Creme de Cacao liquor
Recipe
Preheat oven to 350º. Center rack
Beat sugar and eggs until light and fluffy...gradually add cream cheese. Beat
till well blended. Stir in melted chocolate, cocoa, and vanilla. Beat sour cream in
thoroughly. Fold in melted butter and pour batter into chilled shell. Bake
approximately 60 minutes at 350º. Center should still seem quite liquidy. Chill
thoroughly.
Take the dog out for a walk. Wash the car. Open the frig and realize it's
still too soon to cut into it. Close the frig. Paint the house. Teach yourself
Latin. Look at the clock....no, you still have 7 1/2 hours before you can cut it. Get
yourself a tattoo.
Garnish: If you're so inclined, take a cookie sheet and put it in a warm oven for 3
minutes. Flip it over and take a block of chocolate and rub it across the surface. Let
it set up and then using a flat spatula, scrap up rolls of chocolate. Don't worry if
they flake...you're going for the lush look of piled chocolate on top of the cake. Or
skip this step entirely....it's your cake....it's your choice.
