    Lindy's #2 Cheesecake

    List of Ingredients




    Crust:
    1 stick butter, melted
    about 60 vanilla
    wafers, crushed

    Filling:
    4 eggs, separated
    1 cup sugar
    1 1/2 lbs. cream
    cheese
    1 Tbsp. vanilla
    Toppping: 1 can cherry or blueberry pie filling

    Recipe



    Combine butter and crumbs and pat on bottom of 10-inch springform pan.

    Beat egg yolks and sugar. Add cream cheese and blend well. Add vanilla. Beat egg whites until stiff and fold gently into cheese mixture. This bears repeating.
    FOLD GENTLY.

    Pour mixture into pan and bake 1 hour at 345. Top will crack.

    Remove from oven and spoon on pie fillling. Bake another 15 minutes. Cool 1 hour.
    Remove sides of pan and refrigerate at least 2 hours before serving.
