    OLD-FASHIONED STRAWBERRY PIE

    This pie is excellent because you can use either fresh or frozen berries, so
    you can enjoy it all the year round! I prefer fresh berries of course, but
    it's almost just as good with frozen ones. :-D
    Makes 1 pie = serves approx 8

    List of Ingredients




    Pie crust:
    1 cup flour
    3 tbs sugar
    3 1/2 oz butter or margarine
    2 tbs water

    Filling:
    4 cups fresh strawberries
    or 14 oz frozen, thawed berries
    scant 1/4 - good 3/4 cup sugar
    good 1/3 cup water
    1 1/2 - 2 tbs cornstarch

    Recipe



    Mix flour and sugar. Cut fat in pieces and chop it together with the flour
    to a crumbly mixture. Add water and quickly work the dough together. Press
    it out in a pie pan, diameter 9 - 10", and bake in the middle of the oven at
    400 - 425F for 15 - 20 minutes.

    Trim the strawberries and cut them in pieces. Mash half of the berries and
    put them in a saucepan. Mix in sugar, water and cornstarch and let boil for
    a few minutes. Allow to cool slightly. Put remaining strawberries in the pie
    crust and pour the strawberry compote on top. Serve with whipped cream or
    ice cream. Enjoy!
