    STRAWBERRY APPLE PIE

    Makes 1 pie, serves 6 - 8

    List of Ingredients




    Dough:
    1 1/4 cups flour
    4 - 5 oz butter or margarine
    2 - 3 tbs water

    Filling:
    approx 2 cups fresh or frozen strawberries
    2 - 3 apples
    good 1/3 cup sugar
    scant 1/4 cup brown sugar
    2 tbs potato starch or cornstarch
    1 egg yolk for brushing

    Recipe



    Put the flour in a bowl. Cut the fat in pieces and finely crumble it into
    the flour. Add water and quickly work the dough together. Leave the dough in
    a cold place for about 1 hour.

    Slice the strawberries. Peel, core and cut the apples in pieces. Mix sugar,
    brown sugar and starch and mix this with strawberries and apples.

    Roll out 2/3 of the dough to a round plate. Put it in a pie pan, diameter
    approx 9". Even out the edges. Roll out remaining dough to a round lid, the
    size of the first dough plate, and make small cuts in it so that the steam
    can ooze out.

    Fill the pie crust and put the lid on top. Press together around the edges
    and brush with egg yolk. Bake in the middle of the oven at 400F for about 45
    minutes or until the lid has taken a nice color and the apples are tender.

    Sift some powdered sugar on top just before serving if you wish. Enjoy!
