Cynthia's Pittsburgh Pie
List of Ingredients
1 container crescent rolls
1 T. Canola oil
1 yellow bell pepper, chopped
1 sm. onion, chopped
1 egg
1/4 c. grated cheese blend (Parmesan, Asiago, Romano)
1 lb. kielbassa (I had a little bit more than that - doesn't matter)
1 tsp. garlic
2 T. Dijon mustard
6-7 slices Swiss cheese.
Recipe
Place rolls in deep dish pie pan, play around till they fit and make a crust. (Don't you love explicit instructions? )
Sauté pepper and onion in oil until soft. Drain and place in small bowl to cool.
Cut kielbassa in chunks; place in food processor with steel blade. Process until it is completely chopped up fine. Add kielbassa to skillet. Add a little oil if necessary, but sauté it with the garlic.
Stir egg and grated cheese into the pepper/onion mixture. Pour into the pie shell. Drain the kielbassa as best you can, stir in the mustard. Spoon this into the pie shell. Top with cheese, covering as much of the top as possible.
Bake at 350F, ,about 35 minutes. Serve hot.
