    Melt-in-Your-Mouth Chicken Pie

    Source of Recipe

    clayton on Mimi's

    List of Ingredients

    Chicken breasts=(enough to cover the bottom of 9x13 pyrex dish. (cooked and cut in pieces)
    1=lg. can Veg-All vegetables (small cut ones)
    1=reg. size can sliced potatoes
    1=can cream of chicken soup (I use celery soup)
    2=cups chicken broth
    1/2=teaspoon salt
    1/2=teaspoon black pepper
    Crust: for top
    1=stick butter (melted)
    1=cup self-rising flour
    1=cup buttermilk (do not use reg. milk)

    Recipe

    Cook chicken, spread in 9x13 dish. Spread drained veggies and potatoes over chicken. Bring to boil broth. While heating broth, mix melted butter, flour, and buttermilk. Don't overmix...Just until flour gets mixed in. You will need to have this ready because you want to put it on broth/soup mixture while it is hot..
    Mix soup with hot broth, pour over veggie/chicken in pan. Immediately pour crust mixture over top. Bake at 425* for 25 to 30 minutes. The aroma is wonderful. A lot due to the butter and buttermilk. It makes a wonderful crust...Do hope you try it and the crust does melt-in-your-mouth!! (:
