    Fortune Cookies

    These are the most fun cookies to make. One can tailor the fortunes to the guests. My fondest memory was when I did them for a small Bridal Shower. The fortunes could have been rated R. Just be sure the paper slips are ready, as they have to be inserted immediatly, the cookies harden immediatly."

    List of Ingredients





    1 large egg
    1/4 cup sugar
    2 tablespoons vegetable oil
    1/4 cup cornstarch
    2tablespoons water
    Fortunes written on paper strips.

    Recipe



    Heat a large well seasoned griddle until a few drops of water bounce when sprinkled on it. I have an electric griddle that is great, it is heated to 350‡F.

    Beat egg slightly. Gradually add sugar and beat until very thick and ivory colored. Fold in oil. Add 2 tablespoons water and a little of the egg mixture to the cornstarch and stir and mix until smooth; gently beat into egg mixture.

    Drop a heaping tablespoon of batter on the gridle, then spread with a small offset spatula into a cookie about 4 inches in diameter and 1/8 inch thick; bake as many cookies at one time as the griddle will hold. Because the batter tends to seperate, stir lightly before dropping each cookie.

    Bake, turning with a wide flexable spatula to brown underside, about 5 minutes, or until cookies are a light golden brown, and they lift easily from griddle.(Cookies will be hard to get off griddle if they are not baked long enough.)

    Working quickly, remove cookies one at a time; place fortune in center of cookie and fold cookie in half, pinching edges together. Fold again and hang over rim of a large bowl to shape.

    Wipe crumbs from griddle with a paper towel between batches.

    Makes 1 to 1 1/2 dozen.
