Overnight Bean Soup for the Crockpot
List of Ingredients
1 lb. dried small white beans
6 cups water
2 cups boiling water
2 large carrots, diced
3 ribs celery, diced
2 teaspoons chicken bouillon granules
1 bay leaf
1/2 teaspoon dried thyme
salt to taste
1/4 teaspoon pepper
1/4 cup chopped parsley
1 pkg. dry onion soup mix
fried bacon crumbles
Recipe
Place beans in 6 cups water. Bring to a boil and simmer 2 min. Remove from
heat and cover. Let stand for one hour or overnight. Transfer beans to
crockpot. Add everything else but chicken bouillon, parsley, and salt. After
soup has cooked for about 5-5&1/2 hours on high, (or 10-11 hours on low) add
chicken bouillon, parsley and salt. Cook for another 15 minutes. Ladle 2 cups
of soup mixture into blender and blend until pureed. Return to crockpot,
stirring to blend.
