1 1/2 lb. boneless pork shoulder or beef stew meat, cut in 1 1/2" cubes
1 lb. 12 oz. can whole tomatoes, cut in large pieces
1 can beef consomme soup
2 T. lemon juice
1 med.garlic clove, crushed
7 oz. canned whole green chiles, cut into thin strips
1 tsp. ground cumin
1/4 tsp. ground cloves
1/4 tsp. sugar
1/3 c. chopped parsley
salt to taste
Recipe
Brown meat in oil. Drain grease. Add tomatoes, the liquid, consomme, lemon
juice, garlic, sugar, cumin, cloves, chiles, parsley and salt. Bring to boil.
Place mixture in 3 1/2 qt. crock pot. Cook on low for 6 to 8 hours, or cook on
stove for 2 1/2 hr. Serve in soup bowls or over rice on tortillas.
