CHOCOLATE THUMBPRINTS
List of Ingredients
3/4 c butter, softened
1/2 c packed brown sugar
1 egg, separated
1/2 tsp vanilla
1-1/2 c flour
1/4 tsp salt
1 c finely chopped nuts
CHOCOLATE FILLING
3/4 c chocolate chips
1 T shortening
2 T light corn syrup
1 T water
1 tsp vanilla
Recipe
Cream butter, gradually add sugar, beat well. Add egg yolk and vanilla.
Combine four and salt, add to first mixture and mix well. Shape into a ball,
cover and chill for 2 hours. Shape in 1" balls. Slightly beat egg white.
Dip the balls into the egg white, then roll in chopped nuts. Place 2" apart
on ungreased cookie sheets. Press thumb in center of each. Bake at 350 for
10-15 minutes, till lightly browned. Cool on racks. Fill each indentation
with chocolate filling.......
CHOCOLATE FILLING
3/4 c chocolate chips
1 T shortening
2 T light corn syrup
1 T water
1 tsp vanilla
Combine chips and shortening in double boiler over simmering water till
melted. Remove from heat and stir in remaining ingredients.
