    HONEY ORANGE CREAM BANANAS

    Serves 4

    List of Ingredients




    4 large, firm bananas
    3 1/2 oz butter or margarine
    good 1/3 cup acacia honey
    1 large orange
    1/4 tsp ground ginger
    12 walnuts, chopped

    Orange cream:
    good 3/4 cup heavy cream
    grated peel from the orange above

    Recipe



    Wash the orange and grate off the peel, very finely. Squeeze out the juice.
    Beat the cream and flavor with grated orange peel, then leave it in the
    fridge until serving.

    Peel the bananas and split them lengthwise. Melt the fat in a frying pan,
    add the honey and about 2 tbs orange juice. Blend well and let the juice
    "boil in". Dilute with some more orange juice and sprinkle with ginger.

    Put in the bananas, cut side down, lower the heat and let the fruit simmer
    _very_ slowly, uncovered, for about 10 minutes. Baste occasionally. If you
    do this right, the bananas won't get mushy on you.

    Gently lift them up, so that they won't break, and put them on a warm
    serving plate. Pour over the sauce and decorate with chopped walnuts. Serve
    the hot bananas immediately with the ice-cold orange cream. Enjoy!
