    LEMON MERINGUE CAKE

    List of Ingredients






    1 yellow cake mix
    1 T grated lemon peel

    Prepare mix as directed on package except add lemon peel before beating.
    Bake in 13x9 pan. Cool

    FILLING:
    1 c sugar
    1/4 c cornstarch
    1/4 tsp salt
    1 c water
    1/3 c fresh lemon juice
    2 T butter
    1-1/2 tsp grated lemon peel
    4-6 drops yellow food color

    Mix sugar, cornstarch and salt in 1-qt saucepan. Stir in water gradually.
    Cook over medium heat, stirring constantly, till it thickens and boils.
    Boil and stir one minute. Remove from heat. Stir in remaining ingredients.
    Cool completely. If too soft, refrigerate till it sets a bit. Spread over
    cooled cake.

    TOPPING
    Mix 1 box of Betty Crocker Fluffy White Frosting mix (nothing else will do
    (according to the directions on the package. Spread over the lemon filling.
