    STRAWBERRY CAKE ROLL

    List of Ingredients




    4 eggs
    1 tsp vanilla
    3/4 c sugar
    3/4 c flour
    3/4 tsp baking powder
    1/4 tsp salt
    Confectioners' Sugar
    3 oz pkg strawberry Jello
    1 c boiling water
    10 oz pkg frozen strawberries
    Cool Whip

    Beat eggs and vanilla, gradually add sugar, beating until light and fluffy.
    combine flour, baking powder, and salt. Stir into egg mixture. Pour into a
    greased 15x10" pan. Bake at 400 for 10 minutes. Immediately turn out onto a
    towel sprinkled with confectioners' sugar. Roll up cake and towel like a
    jellyroll. Let cool 30 minutes, then chill in refrigerator. Dissolve Jello
    in boiling water. Add berries, stirring until they thaw. Chill until
    partially set. Unroll cake and spread with Jello mixture. Return to
    refrigerator and chill until completely set. Carefully reroll cake and chill
    well. Slice and serve with Cool Whip.
