    Recipe Introduction


    Yields = 8 servings
    Servings size = 1/2 cup.
    Calories = 200
    Exchange = 2 meats & 2 veg.

    List of Ingredients




    1 1/2 lbs. lean boneless chuck roast

    1 large onion, peeled & sliced

    1 cup celery, chopped

    1/4 cup water

    1/4 tsp. salt

    1/4 tsp. pepper

    4 large carrots, peeled & sliced

    2 or 3 potatoes, peeled & sliced






    Recipe



    Brown chuck roast over med. heat in dutch oven, coated with veg. spray. Add onion, celery, water, salt & pepper.
    Cover dutch oven & bake at 350’ for 1 hour & 20 min. Add sliced carrots & potatoes and continue to bake covered for 1 hour or until meat & veg. are tender.
    Place meat & veg. on a serving platter & slice meat.
