2# lean ground beef, or turkey
1 1/2 cups chopped onions
1 can (28 oz) diced tomatoes, undrained
1 package (16 oz) frozen corn, thawed
1 can (15 oz) black beans, rinsed and drained
1 cup picante sauce
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 cup shredded reduced-fat cheddar cheese
Recipe
In a large kettle, lightly brown beef and onions over medium
heat. (Drain off fat) Stir in the tomatoes, corn, beans,
picante sauce, cumin, garlic powder and pepper. Bring to
a low boil. Reduce heat, cover and simmer for 15 minutes
or until corn is tender. Stir frequently so it doesn't stick
to the bottom of the kttle. Garnish with cheese.
