    List of Ingredients




    - 1 teaspoon virgin olive oil
    - 1 pound veal cutlets
    - 5 green onions, chopped
    - 1/2 cup Marsala wine
    - 3 tablespoons Dijon-style mustard
    - 1/2 cup non-fat yogurt
    - Pepper to taste
    - Parsley sprigs

    Recipe



    In a large non-stick skillet, heat oil and saute veal quickly,
    about 1 minute on each side. Remove from pan and keep warm.
    Add green onions and wine and bring to a boil. Reduce liquid
    by half. Stir in remaining ingredients except parsley, and
    heat through. Return veal to skillet, cook about 4 minutes
    more until veal is cooked through. Garnish with sauce and
    parsley.
