    List of Ingredients




    - 3 slices bacon
    - 1 cup chopped onion
    - 1 tablespoon flour
    - 1/2 cup reduced-sodium beef broth
    - 1/4 cup cider vinegar
    - 1 tablespoon sugar
    - 1/2 teaspoon celery seeds
    - 1-1/2 pounds russet potatoes, peeled, sliced and cooked, warm
    - Salt and pepper, to taste
    - 2 tablespoons finely chopped parsley



    Recipe



    Cook bacon in medium skillet until crisp; drain and crumble.
    Discard all but 1 tablespoon bacon fat; add onion to skillet
    and saute until tender and browned, about 5 minutes. Stir in
    flour; cook 1 minute.

    Add broth, vinegar, sugar, and celery seeds to onion
    mixture and heat to boiling; boil, stirring constantly, until
    thickened, 1 to 2 minutes. Pour mixture over warm potatoes
    in bowl and toss. Season to taste with salt and pepper;
    sprinkle with parsley.
