- Butter-flavored vegetable cooking spray
- 12 ounces shiitake, or cremini, mushrooms,
sliced, tough stems discarded
- 1/4 cup finely chopped onion
- 1 teaspoon minced garlic
- 1/4 cup dry white wine or reduced-sodium vegetable broth
- 1/4 teaspoon dried thyme leaves
- 1/2 cup fat-free sour cream
- Salt and cayenne pepper, to taste

Spray large skillet with cooking spray; heat over medium
heat until hot. Add mushrooms, onion, and garlic to skillet;
spray with cooking spray and saute 3 to 4 minutes.
Add wine and thyme to skillet; heat to boiling. Reduce heat
and simmer, covered, until mushrooms are very tender,
8 to 10 minutes. Cook, uncovered, on low heat until
mushrooms are dry and well browned, 20 to 25 minutes. Stir
in sour cream; season to taste with salt and cayenne pepper.
