Recipe Introduction


This is from a recipe book called "A Celebration of Cooking in
America: Timeless Recipes from the Kitchens of Pet" from 1984.


List of Ingredients




10 eggs
1/2 c. all purpose flour
1 tbsp. baking powder
1/4 tsp. salt
1/2 c. butter, melted
1 pint Pet Cottage Cheese
4 c. (1 pound) shredded Monterey Jack cheese
2 cans (4 oz. each) old el paso chopped green chilies
old el paso taco sauce or salsa, optional


Recipe



Preheat oven to 400. In large mixing bowl, beat eggs until fluffy.
Add flour, baking powder, salt, and melted butter; beat mixture until
ell blended. Stir in cottage cheese, Monterey jack cheese, and green
chilies. Pour mixture into greased 13x9" baking pan. Bake 15 minutes.
Reduce heat to 350 and bake an additional 30 to 35 minutes or until
golden brown. Cool slightly before cutting. Serve with taco sauce or
salsa if desired.
