Baked Chile Rellenos

with salsa, and guacamole, sour cream and chopped green
onions, as desired
List of Ingredients
1lb ground beef
1 onion, chopped (either white or green)
1/2t each salt and pepper
4 eggs, beaten
1-1/2 cup milk
1/3 cup flour
3 cups Cheddar Cheese
3 cups Monterey Jack Cheese
3 cans whole green chiles (split and seeded) OR
8 poblano chiles, halved and seeded
Recipe
Brown ground beef and onions. Add salt and pepper. Place
1/2 chiles in 13x9 baking dish. Top with all of meat and onions, and 1/3 Cheddar and jack cheeses. Top with the other 1/2 chiles and 1/3 cheeses.
Combine eggs, milk and flour until smooth. Pour over chiles and top with remaining cheeses.
Bake at 350 degrees for 40-50 minutes, or until tests clean.
