Rice Noodles
List of Ingredients
3 ounces rice noodles
1 egg
3 ounces boneless, skinless chicken breast strips
1 tablespoon vegetable or sesame oil
3 teaspoons vinegar
3 teaspoons fish sauce
4 teaspoons sugar
1/2 cup bean sprouts
1 teaspoon lemon juice
1/2 cup chopped green onion
2 tablespoons chopped peanuts
Recipe
Saute chicken in 1 tablepoon oil and set aside.
To prepare rice stick noodles, soak first in warm water for 10 to 15
minutes. Drain and add them to boiling water. Turn off heat and let
them stand for 15 minutes. Then rinse under cold running water until
cool and drain.
Saute rice noodles with egg and cooked chicken. Add rest of
ingredients except for peanuts. Cook until heated, mixing gently with
wooden spoon.
Serve on two plates. Garnish each with 1 tablespoon chopped peanuts.
Yield: 2 servings
