1 1/2 lb. fresh large shrimp, in the shell
2 cloves garlic
1 green onion
1 lemon
1 T. butter
2 T. olive oil
salt
2 T. chopped fresh parsley
Recipe
Peel and devein the shrimp. Mince the garlic and chop the onion. Squeeze 2 T. juice from the lemon.
Heat butter and oil in large frying pan over medium heat. Add shrimp, garlic and 1 tsp. salt. Saute, stirring, until the shrimp turn pink, 3-4 minutes. Stir in lemon juice and green onion. Sprinkle wtih parsley and serve. Makes 4 servings.
Serves wtih rice or noodles. Add a salad or a green vegetable...
Can also make a large platter of this dish for appetizers.
