Shrimp with Green Pepper

List of Ingredients
1 1/2 lb. raw shrimp
3 green bell peppers
2 tomatoes
1/4 c. vegetable oil
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. ginger
1 clove garlic, minced
1/2 c. boiling water
1 T. soy sauce (or to taste)
1/4 c. sliced green onionsRecipe
Wash and dry shrimp. Cut each pepper into 8 pieces and tomatoes into 6 pieces. Heat oil in deep skillet or wok.
Add shrimp, salt, pepper, ginger and garlic. Cook over low heat two minutes, stirring constantly. Add peppers, cook 1 minute, still stirring. Add water and soy sauce. Cover, bring to boil and cook 3 minutes. Stir in tomatoes and cook 3 more minutes. Stir in green onion, cook 1 minute.
Serve with steamed rice.
Serves 6.
