    Boiled Beef Sandwich

    List of Ingredients







    4 lbs. beef shoulder roast, blade in
    1 large onion, quartered and stuck with 2 cloves
    2 carrots, sliced in half
    One clove of garlic, bruised
    2 stocks of celery with leaves
    4 sprigs parsley
    1 bay leaf
    1 sprig thyme
    10 black peppercorns

    Recipe



    Serves: 4

    Place meat and other ingredients in a shallow pot and barely cover
    with water. Preheat the oven to 220 degrees. Bring pot to a simmer on
    top of the stove, cover, put a weight on the cover (bricks will do)
    and place in the oven. Cook for 4 hours or until tender. Serve with
    salsa verde (recipe below).

    For the salsa verde:
    1 cup parsley leaves
    1 small shallot
    1 salt-packed anchovy fillet
    1 tbls. capers
    Lemon, olive oil, sat and pepper to taste

    Chop or blend ingredients. Sauce should be moist but not runny.
