Low-fat Smoked Sausage Skillet Dinner
List of Ingredients
1 sm Cabbage, chopped
1 sm Onion, diced
1/2 Green or red pepper, diced
1 lb Low-fat (turkey-based) Smoked Sausage or kielbasa, -sliced in 1/4-inch rounds
8 Frozen potato pierogis
1/2 c Water
2 cl Garlic, sliced
Recipe
Preheat the skillet to medium heat. Chop cabbage, onion, pepper and garlic and place in dry skillet. Immediately pour the water into the skillet - you want enough water to steam the veggies, but not so much that you have water left in the skillet when you're done cooking. Cook, stirring often for 8 minutes or until water is nearly all gone and cabbage is wilting. Add smoked sausage and mix well (this will add enough oil to continue the cooking). Meanwhile, parboil the pierogis until soft. Add them to the sausage mixture, and be gentle when mixing, as you want them to stay intact. Cook another 10-15 minutes altogether, until cabbage is tender and pierogis are crisping slightly. Serve sprinkled with a little freshly ground pepper, and a little paprika as you like
