CHICKEN MANICOTTI
List of Ingredients
8 manicotti shells
3 T butter or margarine
3 T flour
2 c milk
1-1/2 c shredded Monterey Jack cheese
1/4 tsp salt
1/4 tsp Worcestershire sauce
1-1/2 c chopped, cooked chicken
1 c small curd cottage cheese
1 egg, beaten
1/4 c minced onion
2 T minced fresh parsley
1/2 tsp Italian seasonings
2 T butter or margarine, melted
1/8 tsp paprika
1 c soft breadcrumbs
Recipe
Cook and drain shells. Melt butter in saucepan over low heat. Add flour,
stir till smooth. Cook one minute, stirring constantly, till thick and
bubbly. Stir in milk, cheese, salt, and Worcestershire sauce. Stir until
cheese melts. Set aside but keep warm. Combine chicken, cottage cheese,
egg, onion, parsley, and Italian seasonings. Stuff this mixture into the
shells. Spoon 3/4 c sauce into lightly greased 13x9 pan. Arrange shells in
pan. Top with remaining sauce. Combine melted butter and paprika, stir in
crumbs. Sprinkle over top of shells. Bake at 350 for 30 min, till hot and
lightly browned.
