    Chicken Pasta Italiano ~

    Choose the reddest, ripest tomatoes for this zesty, fresh-tasting pasta
    sauce that also offers strips of chicken, crisp bacon bits, and a
    generous amount of garlic.

    List of Ingredients




    1/4 pound sliced bacon, chopped
    4 cloves garlic, minced or pressed
    3/4 pound skinned, boned chicken breast, cut into 1/4-inch-wide strips
    4 medium-size tomatoes, seeded and chopped
    1/2 cup dry sherry or regular-strength chicken broth
    1 tablespoon Italian seasoning or 3/4 teaspoon each dry basil, oregano,
    thyme, and marjoram
    1/8 teaspoon ground red pepper (cayenne)
    6 ounces spaghetti
    1/2 cup grated Parmesan cheese

    In a wide frying pan, cook bacon over medium heat until crisp. Lift out,
    drain, and set aside. Discard all but 2 tablespoons of the drippings.

    Add garlic and chicken to pan. Cook over high heat, stirring, until meat
    is lightly browned (about 3 minutes). Remove chicken from pan and set
    aside.

    Add tomatoes, sherry, Italian seasoning, and red pepper to pan; boil over
    high heat until most of the liquid has evaporated (about 10 minutes).

    Meanwhile, in a 4- to 5-quart pan, bring 2 quarts water to a boil over
    high heat. Add spaghetti; let water return to a boil and cook just until
    al dente (10 to 12 minutes). Or cook according to package directions.

    Return chicken to tomato mixture; stir until heated through. Drain
    spaghetti and arrange on a warm platter. Spoon chicken mixture over and
    sprinkle with bacon. Offer cheese to add to taste.

    To Microwave: Place bacon in a 9- to 10-inch microwave-safe dish; cover
    lightly with a paper towel. Microwave on HIGH (100%) for 6 to 7 minutes,
    stirring once or twice, until bacon is crisp and browned. Lift out,
    drain, and set aside; discard all but about 1 tablespoon of the
    drippings.
    Stir in garlic and chicken. Cover and microwave on HIGH (100%) for 4 to 5
    minutes, stirring once, until chicken is opaque throughout. Lift out
    chicken and set aside.

    Add tomatoes to dish. Reduce sherry to 1/4 cup and add to tomatoes with
    Italian seasoning and red pepper. Microwave, uncovered, on HIGH (100%)
    for about 15 minutes, stirring 2 or 3 times, until tomatoes are soft.

    Meanwhile, cook spaghetti as directed. Stir chicken into tomato sauce and
    microwave, uncovered, on HIGH (100%) for 1 to 2 minutes or until heated
    through. Serve as directed.

    Yield: Makes 2 or 3 servings.
