Garlic Roasted Bell Peppers Linguine
List of Ingredients
12 oz (360g) Linguine
2 tsp Extra Virgin Olive Oil
6 cloves Garlic, minced
1/2 C (125ml) Roasted Red Bell Peppers, chopped (drained if using from a
jar)
2 T Grated Parmesan Cheese
to taste Salt
to taste Ground Black Pepper
Recipe
In a large pot, bring salted water to a rolling boil.
Add the pasta and cook for 8-10 minutes or until pasta
is al dente.
While pasta is cooking, heat oil in a heavy nonstick
skillet over medium high heat. Saute garlic and roasted
peppers 2-3 minutes until hot.
Drain pasta and transfer to serving bowl. Top with the
roasted peppers and garlic and toss.
Sprinkle the Parmesan cheese and season with salt and pepper
to taste. Toss again.
Enjoy with a nice green salad
