Large bunch of broccoli
1 tablespoon extra-virgin olive oil
Several cloves of garlic, chopped or mashed
1/4 cup water
Salt to taste
Red-pepper flakes (optional)
Recipe
Trim the end of the broccoli, cut off the main stem, peel it to beneath the
fibrous layer, and cut into bite-sized chunks. Separate the head of the
broccoli into bite-sized pieces and peel a bit of the skin from the stems to
make them more tender. Wash the broccoli; place it in a pot with the olive
oil, water, salt, and garlic. Bring to a boil, cover tightly, and let steam
until the broccoli is bright green and very crunchy-tender - no more than
five minutes. Remove the lid and boil off most of the remaining liquid.
Serve at once.
You can mix this with cooked pasta, season it with red-pepper flakes and
parmesan cheese, or eat it as is.
