Penne with Italian Sausage and Peppers

List of Ingredients
8 oz. Penne or ziti
12 oz. jar roasted red peppers (in olive oil and garlic, if possible)
1 green bell pepper
2 spicy (or regular) Italian sausage links, about 4 oz.
2 garlic cloves, finely chopped
2 tsp. fresh thyme or 1/2 tsp. dried
2 T. olive oil
1 tsp. lemon juice
1 lg. tomato, peeled, seeded and finely chopped
1 T. red wine vinegar
1/4 tsp. kosher salt
Recipe
Add pasta to 3 qr. boiling water with 1 1/2 tsp. salt; start testing after 10 minutes and cook until al dente.
Heat large skillet, add olive oil. Squeeze the sausage out of the casings and break meat into small pieces; sauté over medium-high heat until meat is browned, about 3 minutes. Add chopped bell pepper, sauté another minute or two. Remove pan from heat and stir in garlic and thyme. Cut roasted peppers into strips.
Return skillet to medium heat. Add roasted peppers AND the liquid from the bottle, tomato, vinegar, lemon juice and salt. Simmer sauce until it thickens and is reduced about 1/3, takes 5-7 minutes.
Drain pasta, return it to the pot and combine it with the sauce. Cover the pot and let the pasta stand for five minutes to allow flavors to blend. Serve with grated Parmesan, Romano or even Asiago!!! Serves 4.
