Your favorite pasta, cooked, drained
4 c. vegetables (see below)
1/4 c. Fat-Free/Low-Fat Alfredo Sauce
1/2 c. chicken broth
1 med. clove crushed garlic
3 T. shallots
Get all the types of vegetables you like from the grocery store salad bar -- here are some
suggestions:
onions
peas*
carrots (junienned are best)
spinach*
mushrooms
zucchini or summer squash
peppers
diced tomatoes*
cabbage (Napa is the best)
broccoli (pick small pieces)
cauliflower (pick small pieces)
artichoke hearts
Recipe
Get about 3-4 cups of vegetables. Either stir fry with a touch of olive oil, or if FAT FREE, sweat them in the microwave until soft (if noted *, leave out at this point). Add garlic and shallots. Next add all the vegetabless you chose that have a * .
At this point you can (but don't have to) add favorite spices if you wish.
Add the chicken broth and then the Alfredo Sauce. Stir well.
Put cooked and drained pasta into pan with sauce; toss, mixing well. Serve with Parmesan cheese.
