Tomato Mushroom Alfredo
List of Ingredients
1 T Olive Oil
2 Green Onions, chopped
3 cloves Garlic, minced
1 T Fresh Basil (1 tsp if dry)
1 T Fresh Parsley
pinch Oregano
pinch Marjoram
1/4 tsp Nutmeg
2 C (1/2L) Half & Half
1/2 C (115g) Butter
1 C (250ml) Parmesan Cheese
1 1/2 C (375ml) Peeled Diced Tomatoes
1 C (250ml) Fresh Mushrooms
to taste Fresh Ground Pepper
to taste Salt
Recipe
Heat oil in 2 quart saucepan over medium high heat.
Saute or "sweat" onions, garlic and herbs for about 20 seconds.
Reduce heat to medium low, add half & half and
heat until steamy.
Add nutmeg and butter and stir until melted.
Add parmesan cheese and stir constantly until smooth.
Add tomatoes, mushrooms, salt and pepper and remove
from heat.
Let stand covered for five minutes stirring occasionally.
Pour over favorite pasta and serve.
