FRIED PORK WITH ONION SAUCE

List of Ingredients
400 g (3/4 lb) lightly salted side of pork
Sauce:
2 tbs butter or margarine
2 finely chopped onions
5 dl (2 cups) milk
dash salt
dash white pepper
Recipe
Cut the rind from the pork. Slice in smaller pieces if necessary. Place the
pork in a cold frying pan and place over burner. Reduce heat when fat begins
to render. Fry 2 - 3 minutes on each side, depending on how crisp you would
like your pork.
Melt the butter in a saucepan on low heat. Sautee the onion in the fat.
Remove saucepan from burner and stir in the flour. Add all the milk at once,
replace on burner and bring to a boil, stirring constantly. Boil for 3 - 5
minutes. Season with salt and pepper. Serve with boiled potatoes and a raw
vegetable salad. Enjoy!
