    List of Ingredients




    3 lbs. potatoes, peeled if desired, and cut into bite size chunks (8 cups)
    8 oz. pkg. reduced fat cream cheese
    10 3/4 oz. reduced fat condensed cream of chicken soup
    1/2 cup light sour cream
    1/2 cup shredded sharp cheddar cheese
    1/4 cup sliced green onions
    1/4 cup milk
    1 tbsp. butter or margarine, melted
    2 tbsp. snipped fresh parsley
    1/4 tsp. garlic salt
    1/4 tsp. pepper

    Recipe



    In a saucepan cook potatoes in boiling water for 10 mins or until tender. Drain.
    Rinse with cold water and drain again; set aside.*

    Meanwhile in a lr. bowl beat cream cheese until softened. Stir in the soup, sour
    cream, 1/4 cup of the cheddar cheese, 3 tbsp. onions, milk, butter, parsley, garlic
    salt and pepper. Mix well. Stir in the cooked potatoes.

    Spoon mixture into a 2 qt. rectangular baking dish and place dish on a baking
    sheet in the oven. Bake, uncovered, at 350 degrees 25 mins. or until heated
    through. Sprinkle remaining cheddar cheese and green onion on top. Bake 5
    mins more. Makes 10 servings.

    Note: After cooking and draining the potatoes, you can cover and chill them for
    up to 24 hrs. before finishing the recipe.
