6 large baking potatoes
2 sticks butter, melted
1/2 tsp. salt
freshly ground pepper
1/2 cup heavy cream
3/4 cup coarsely shredded Swiss cheese

Bake potatoes. Cut slice off each potato and scoop out pulp (do not mash, but break up coarsely. Add butter, salt and pepper. Turn into a 9" glass pie pan. Pour cream over and let stand 30 minutes. Sprinkle with cheese and bake in preheated 375F oven 20 minutes, or until cheese melts and forms a golden crust. Serves 6.
To microwave: pierce each potato several times with fork. Place on 2 paper towels and cook according to manufacturer's directions. Follow remaining directions as above. Bake in microwave until heated through and cheese is melted.
You can use less butter.
