Ham and Hash Browns

List of Ingredients
3 c. frozen shredded potatoes
1 c. cooked ham, finely chopped
1 c. shredded Cheddar cheese
1/4 c. finely chopped green pepper
2 large eggs, beaten
1/3 c. butter or oleo, melted
1/2 c. milk
1/2 tsp. salt
1/4 tsp. pepper
Recipe
Thaw potatoes on paper towels to remove extra moistness. Press potatoes into bottom and up sides of ungreased 9" pie plate. Drizzle with butter. Bake at 425 for 25 min, or until lightly browned. Cool 10 minutes.
Combine ham, cheese and green pepper, spoon into potato shell. Combine remaining ingredients, beating well. Pour over ham mixture, bake at 350 for 25-30 min. or until set. Let stand 10 min. before serving.
*Another idea: make your favorite scalloped potato recipe. Only add a layer or two (depending on how much you make) of small pieces of ham and green pepper. Also, add 1 bay leaf to your potatoes - makes a fantastic flavor...
