Mashed Potato Casserole

1 (5 pound) bag of potatoes
1 (8 ounce) box of cream cheese, softened
1 (8 ounce) container of sour cream
1 teaspoon of salt
1/4 teaspoon of pepper
2 tablespoons of margarine
1 cup of cheddar or Velveeta cheese, shredded
1 or 2 tablespoons of additional margarine
1/2 cup of additional cheddar cheese Recipe
* Peel and dice potatoes. Cook in boiling, salted water until tender. Drain well.
* In a large bowl, mash the potatoes. Add the cream cheese, sour cream, 2 tablespoons of margarine, and seasonings. Beat until smooth and fluffy.
* Stir in the cheddar cheese.
* Spoon potato mixture into a lightly greased casserole dish and top with dots of additional margarine.
* Bake, covered, at 350F for 30 minutes.
* Sprinkle with additional cheese, if desired, and allow the cheese to melt.
You may make this ahead of time, refrigerate, and bake just before serving.
